Wagyu Burger with Bacon Gruyere and Frickles recipe: Ingredients
- 4 slices streaky bacon
- 4 slices gruyere cheese
- 4 brioche burger buns, sliced open and lightly toasted
- 1/4 cup whole egg mayonnaise
- 4 cos lettuce leaves, shredded
- 1-2 vine-ripened tomatoes, sliced
- Smokey barbecue sauce or tomato sauce, to serve
Wagyu Burger recipe: How to make the Pattie
- 600g Wagyu beef mince
- 1 small onion, finely chopped
- 2 cloves garlic, crushed
- 1 tablespoon of Dijon mustard
- 1 tablespoon smokey barbecue sauce
- 1 egg yolk
- 3/4 cup panko breadcrumbs
To make patties, place ingredients in a bowl. Season with salt and pepper. Mix well with your hands. Form into 4 x 10 cm diameter patties. Place onto a baking tray lined with baking paper. Chill for 30 minutes.
Frickles recipe: How to make Frickles
- 4 large dill pickles, sliced lengthways into 4 (we used Polski Ogorski)
- 2 egg whites
- 1/3 cup corn flour
- 1 tsp sweet paprika
- 1 tsp garlic salt
- Vegetable oil, for deep frying
Step one: To make frickles, dry sliced pickles with paper towel. Combine whisk egg white, cornflour, paprika and garlic salt in a bowl.
Step two: Heat an oiled chargrill or barbecue plate over a medium heat. Cook patties for 4 to 5 minutes on each side or until cooked to your liking. Place a slice of gruyere onto each pattie 2 minutes before the end of cooking. Cook bacon on same grill or plate for 3 minutes, turning once, or until cooked to your liking.
Step three: Heat vegetable oil in a large deep frying pan over a medium heat. Dip pickles into batter. Cook, in batches, for 2 to 3 minutes, turning once, or until crisp and golden. Drain on paper towel.

By this stage, you’ve done all the hard work. All that’s left to do is assemble the burger. To do this, spread lids with mayonnaise and bases with sauce. Top with patties, lettuce, tomato, pattie, bacon and frickles.
Smart Tip: Wagyu is the highest quality beef available in Australia. It is famous for the intense marbling of the meat and juicy rich flavoured flesh. If Wagyu is unavailable, premium mince can be used.
