Love olives? Impress your family and friends with this tasty pre-dinner appetiser.
Serves 4
1½ cups plain flour
½ tsp ground cumin
¼ tsp smoky paprika
1/3 cup cold water
¼ cup olive oil
16 large stuffed green olives (we used olives stuffed with Manchego cheese)
oil for deep frying
sea salt flakes
How to make stuffed olives wrapped in pastry
1 Place flour, cumin, paprika, salt and pepper into a bowl. Stir until combined. Add water and oil. Stir until a smooth dough forms (this is easiest with your hands). Spoon approximately 1 tbsp of pastry into the palm of your hand and flatten until large enough to wrap around an olive.
2 Place an olive into the centre of pastry. Press edges of pastry together to enclose olive. Place onto a large plate. Repeat with remaining pastry and olives.
3 Half fill a small saucepan with oil and place over a medium heat. When oil is hot, add 1/3 of olives and cook for 2 minutes or until golden. Transfer to a plate lined with paper towel and sprinkle with sea salt flakes. Cook remaining olives. Serve with sherry, if desired.
TIP: For best results, pat olives dry with paper towel to remove oil before wrapping pastry around them.
