Our favourite olive recipes

SMASHED ORANGE OLIVES WITH FETA

Serves 4

  • 140g firm green olives
  • 1⁄2 cup Cobram Estate Robust Flavour Extra Virgin Olive Oil
  • 140g feta cheese, chopped into pieces
  • 1⁄4 tsp red chilli flakes
  • 1⁄2 tsp fresh rosemary leaves A few pieces of orange peel 1⁄2 tsp salt

Place the olives on a cutting board and carefully hit with the side of a large knife to crack them open a little. Place them in a bowl with all the other ingredients. Set the olives aside for half an hour at room temperature before serving.

 

OLIVE TAPENADE

Makes 2 cups of tapenade

  • 200g kalamata olives, pitted
  • 2 garlic cloves
  • 1 tsp capers, drained
  • 1 cup chopped fresh Italian parsley
  • 1 tsp Dijon mustard
  • 2-3 tbsp Cobram Estate Robust Flavour Extra Virgin Olive Oil

Roughly chop olives, garlic, capers and parsley. Place in a bowl, add mustard and half the oil. Mix well. Add more oil to get the desired consistency. Season.
