Serves 4
1 cup caster sugar
3 large limes
1 large mango, flesh removed, diced
2 white nectarines, halved, stone removed, cut into wedges
½ small pineapple, skin removed, cut into pieces
1 punnet strawberries, halved
1 cup mint leaves
coconut ice-cream or gelato, to serve
Place sugar into a small saucepan. Using a zester, remove long strips of rind from limes. Juice limes (you will need 1/3 cup juice). Add juice to pan with sugar and place over a medium-low heat. Stir until sugar dissolves and mixture comes to the boil. Simmer for 2 minutes. Remove from heat. When cool, pour into a bowl. When cold stir through lime zest.
Thread pieces of fruit and mint leaves onto prepared bamboo skewers. Place onto a serving platter. Drizzle with lime syrup and serve with coconut ice cream or gelato.
