Serves 2-4
500g of beef diced into 2cm cubes (alternatively use 1 pack of Silver Fern Farms Venison Diced)
1 onion, finely chopped
1 green apple, cut into wedges
2 tsp flour
1 tsp curry
2 tsp sugar
2 tbsp tomato relish
1 cup water
½ tsp crushed chilli
½ cup sultanas (optional)
In a large pot, sauté onions and apple for about 5 minutes, until softened. Add the beef. Mix remaining ingredients together and add to the pot. Season to taste with salt and freshly ground black pepper. Bring to the boil.
Reduce the heat, cover and simmer for 1 hour, or transfer to a casserole dish in a moderate oven (180°C) and cook for 1 hour.
Once cooked, the casserole can be packed into a sealable container and frozen for later use.
