Vegan Grilled Green Beans with Peach Dressing Recipe
Serves 6-8
Ingredients:
800g mixed beans, trimmed (we used flat beans and green beans)
½ cup baby mint leaves, to serve
Peach dressing
¼ cup extra virgin olive oil, plus extra to brush
1 small red onion, finely chopped
1 tsp finely grated lemon zest
2 tbsp lemon juice
½ tsp yellow mustard seeds, toasted
2 yellow peaches, stone removed and chopped
Method:
Preheat chargrill pan over high heat. Brush the green beans with oil. In batches, place on the grill and cook for 2 minutes, each side. Repeat with remaining beans. To make peach dressing, mix to combine oil, onion, lemon zest, juice and mustard seeds in a bowl; season with salt and pepper. Add the peaches and toss to combine.
Set aside. Serve beans, topped with dressing and mint leaves.
