Vegan Grilled Green Beans with Peach Dressing
Enjoy the bounty of Spring with this delicious Grilled Green Bean Salad. Served with Peach Dressing, this vegan recipe is the perfect fresh side dish.

Serves 6-8


800g mixed beans, trimmed (we used flat beans and green beans)

½ cup baby mint leaves, to serve

Peach dressing

¼ cup extra virgin olive oil, plus extra to brush

1 small red onion, finely chopped

1 tsp finely grated lemon zest

2 tbsp lemon juice

½ tsp yellow mustard seeds, toasted

2 yellow peaches, stone removed and chopped

  1. Preheat chargrill pan over high heat. Brush the green beans with oil. In batches, place on the grill and cook for 2 minutes, each side. Repeat with remaining beans. To make peach dressing, mix to combine oil, onion, lemon zest, juice and mustard seeds in a bowl; season with salt and pepper. Add the peaches and toss to combine.
  2. Set aside. Serve beans, topped with dressing and mint leaves.
