Waffles with Roasted Peaches and Brandy Butter Sauce
Waffles with Roasted Peaches and Brandy Butter Sauce recipe, brought to you by MiNDFOOD.

Serves 6

4 yellow peaches, halved, stone removed

1 tbsp caster sugar

12 Belgian-style waffles

½ cup brown sugar

60g butter

1/3 cup brandy

½ tsp ground ginger

½ tsp ground cinnamon

1 Preheat a grill on high. Line 2 baking trays with baking paper. Place peaches onto one baking tray. Sprinkle with caster 
sugar. Cook for 3-4 minutes
or until golden.

2 Place waffles onto second baking tray and place under grill. Cook for 2 minutes each side or until golden and heated through.

3 Heat brown sugar in a non-stick frying pan over a medium-low heat, swirling around pan occasionally until melted and a rich golden caramel colour. Add butter, shaking pan until melted.

4 Add brandy (taking care as it bubbles up), ginger and cinnamon. Stir until well combined. If mixture is too thick, add a little water 1-2 tablespoons at a time, until desired consistency.

5 Place waffles onto serving plates and top with peaches. Spoon over sauce, with extra on the side. Serve.
