Warm up this winter with this delightfully creamy Spiced Boozy Hot Chocolate.
6 cups milk
2 cinnamon sticks
1 vanilla bean, split
2 cardamom pods, bruised
200g good-quality dark chocolate, plus extra, melted, to drizzle
1/4 cup crème de cacao
Marshmallows, to garnish
Place milk, cinnamon sticks, vanilla and cardamom in a large saucepan over a low heat. Simmer for 2 minutes or until fragrant. Remove from heat and set aside for 5 minutes to cool slightly.
Place dark chocolate in another large saucepan over a low heat. Strain milk mixture over chocolate, discarding bean and pods. Stir over a low heat until chocolate melts and mixture is smooth. Remove from heat and stir in crème de cacao.
Dip marshmallows in extra melted chocolate and drizzle more extra melted chocolate around insides of glasses.
Pour hot chocolate into glasses and top with dipped marshmallows. Serve.
