1½ cups skim milk or full-cream milk
1 small banana, sliced
⅓ cup fresh blueberries
1 tbsp honey
2 slices brioche, cut into ‘soldiers’
1. Place milk, banana, blueberries and honey into a food processor or blender and pulse until a smooth mixture forms. Pour into a glass.
2. Place eggs into a small saucepan, cover with water and place over a high heat. Bring to the boil and simmer for 3 minutes for a soft egg, or until cooked to your liking.
3. Place brioche soldiers onto a baking tray. Cook under a hot grill until golden. Turn and cook for 1 minute or until golden. Serve eggs with brioche soldiers and smoothie.
