Smoky Maple Bacon Burger Sauce
Makes 1¼ cups
Ingredients
100g streaky bacon, rind removed and finely chopped
250g pre-cooked beetroot, grated
¼ cup brown sugar
2 tbsp red wine vinegar
1 tsp smoked paprika powder
1 cup tomato passata
¼ cup maple syrup
1 bay leaf
Method
- Place a medium non-stick, deep-sided frying pan over medium heat. Add the bacon and cook for 4 minutes, stirring occasionally until crisp. Add beetroot, sugar, vinegar, paprika, passata, maple syrup and bay leaf.
- Bring to a simmer, reduce heat to low and cook for 10-15 minutes, or until reduced and thickened. Set aside to cool. Store in a glass jar, refrigerated for 1 month.
Smart Tip
This sauce is perfect on a classic beef burger. The bacon adds smokiness; the beetroot adds colour and flavour.
