If your idea of a salad is to mix some iceberg lettuce with some sliced cucumber and drizzle with olive oil, then it could be time to expand your repertoire. Although a salad is traditionally served as a side dish, as you’ll discover, some of the best salads can be enjoyed as a main meal in their own right. Here’s our pick of the best salads to enjoy this summer.

Peach Celery and Pasta Salad

Don’t shy away from using fruit in your salad. The juicy flesh of an in-season peach adds a natural sweetness to this savoury dish, and works perfectly in combination with crispy celery. Combined with pasta this is the ideal side dish for your summer picnic.

Beetroot, Watercress and White Anchovy Salad

Make the most of the changing seasons and dress freshly baked beetroot with eggs, white anchovies, yoghurt and dill for a delicious summer salad.

Poached Chicken Caeser Salad

Try this tasty, fresh version of the traditional Caesar salad for a quick and easy midweek meal.

Potato Salad with Fresh Herbs

No barbecue is complete without a side dish of potato salad. New potatoes typically have a slightly sweet flavour so require little extra seasoning. A selection of fresh herbs such as mint and chives, chopped finely, along with salt and pepper is often all you’ll need.

Tuna Nicoise

Make this traditional salad a dish to remember with a seared tuna steak, thickly sliced and scattered on top of crisp cos lettuce. With the additional flavours of anchovy fillets and olives, this salad will make a filling main dish.
