Serves 4
500g mango, chopped
2 tbsp grated ginger
1½ cups cool organic green tea, unstrained
1 Place the mango into a food processor or blender. Process until pureed or mash thoroughly.
2 Pour the mango puree, ginger and green tea into a jug and mix to combine. Pour mixture into a shallow metal baking tray or bowl, and place into the freezer. Allow the mixture to start forming an icy edge; this will take about 2 hours initially.
3 Using a fork, gently mix and mash the ice every 1-2 hours until you get a nice slushy effect, then allow it to freeze totally. It may take overnight to fully freeze. Just before serving, rake with a fork. Serve in small glasses and top with some fresh fruit if desired.
