To speed up preparation use canned butter beans and green beans. Just drain and rinse before using them to make this Power Salad with Tomato Dressing.
Power Salad with Tomato Dressing Recipe
Serves 6
Ingredients:
1 cup dried large white butter beans
150g runner beans
1 cup dried red quinoa, soaked
400g can black beans, drained
½ cup chia seeds
½ cup pepitas
1 red capsicum, diced finely
2-3 spring onions, finely sliced
400g corn kernels
¼ cup flat-leaf parsley, finely chopped
150ml avocado oil
2 avocados, diced
Tomato Dressing
2 large tomatoes
2 tsp cumin seeds
3-4 drops hot chilli sauce
3 tbsp finely chopped fresh coriander
1 tbsp crushed garlic
3 tbsp lime juice
Zest 1 lime, plus extra wedges, to serve
1 tsp sugar
½ cup olive oil
Method:
Place butter beans in a bowl covered in cold water and leave to soak for 3-4 hours or overnight. Cook in boiling water for 30-60 minutes until tender. Drain, rinse, set aside.
Trim and remove any tough strings from runner beans. Slice beans into pieces. Bring large pot of salted water to the boil. Blanch beans for 2 minutes until tender, then remove and plunge into icy cold water. Drain and set aside.
Wash quinoa grains until water runs clear. Simmer in a pot of water for about 10 minutes or until grains are translucent. Drain using a fine sieve and refresh under cold water. Drain and press with a clean tea towel to remove excess moisture. Set aside.
Mix (or layer for visual effect) cooked butter beans, runner beans, quinoa, black beans, chia seeds, pepitas, diced capsicum, spring onion, corn kernels and parsley in clean, dry glass jars. Season to taste and drizzle over avocado oil. Seal with lids.
To make tomato dressing, make a cross on the end of each tomato. Drop in boiling water for 30 seconds, then plunge into cold water to stop cooking. Peel away skin and remove seeds. Toast cumin seeds in a small frying pan until fragrant.
Place tomato and cumin seeds in a blender with chilli sauce, coriander, garlic, lime juice, zest, sugar and olive oil. Season. Blend until smooth.
Spoon dressing into glass jars just before serving and accompany with avocado and lime wedges.
