Dripping with melted gruyère, this warm toasted sandwich is a quick and easy way to fill up the whole family and use up your homemade pickled pork.
Serves 4
8 slices grainy bread
2 tbsp Dijon mustard
8 slices leftover pickled pork
12 0g gruyère or mozzarella,
thinly sliced
60g butter, softened
cornichons (gherkins), to serve
1 Place 4 slices of bread on a flat surface. Spread with mustard. Top with slices of pork and cheese. Spread butter on remaining slice of bread and place over sandwich filling, butter side down. Spread butter onto outsides of sandwiches.
2 Heat a non-stick frying pan over a medium heat or place in a sandwich press. When pan is hot, add 2 sandwiches and cook for 2-3 minutes on each side or until bread is golden and cheese has melted. Halve sandwiches and serve with cornichons, if desired.
