Overnight Bircher with Apple & Pumpkin Seeds
Make your own delicious bircher for breakfast this Spring.

Serves 2

½ cup kefir or yogurt
1 cup milk of choice, plus extra to serve
½ cup rolled oats
2 tbsp pumpkin seeds
½ tsp ground cinnamon
Pinch of salt

To serve:
1 apple, ½ grated, ½ sliced strawberries
Maple syrup or honey
Cream or coconut cream
Pumpkin seeds
Bee pollen

Place bircher ingredients in a bowl and stir to combine. Cover with a plate and set aside to soak overnight. In the morning, fold through the grated apple and spoon into two bowls. Drizzle with maple syrup or honey and top with apple slices and strawberries, a dollop of cream and a sprinkle of pumpkin seeds and bee pollen.
