Oven Baked Porridge
With the classic flavours of toasty oats baked with walnuts and apple, cinnamon and vanilla sugar, this oven baked porridge makes a lovely addition to a Sunday brunch with guests.

Serves 8

 

Ingredients

650g oats

50g chia seeds

2 tbsp baking soda

1 tbsp vanilla sugar

2 tsp cinnamon

½ tsp salt

350ml milk or plant-based almond milk

2 eggs

50g melted butter

1 apple, cut into pieces

50g walnuts, cut into pieces

Fruit, nuts and cream, to serve

 

Method

  1. Preheat the oven to 195°C (175°C fan forced). Mix all the dry ingredients into a baking bowl. Put all the wet ingredients in another bowl. Then pour the dry ingredients into the wet. Stir well. Add the apple and walnuts.
  2. Line a mould or cake tin and pour in the filling. Bake for 30 minutes. Serve lukewarm with fruit, nuts and cream if desired.
