Meatballs in Adobo Tomato Sauce Recipe

Ingredients:
400g beef mince
400g pork mince
1½ tsp adobo spice mix
1 garlic clove, finely chopped
1 carrot, grated
2½ tsp sea salt and freshly ground pepper
2 cups fresh breadcrumbs
2 large eggs
2 tbsp milk
2 tbsp olive oil
½ cup shaved parmesan
Chopped parsley, to garnish
Mashed potato, to serve
Adobo Sauce
1 tbsp olive oil
1 onion, diced
2 cloves garlic, diced
2-3 tsp adobo spice mix, depending

¼ cup red wine
800g diced tomatoes
1 cup chicken stock
Method:
In a large bowl, place the beef and pork mince, adobo spice, garlic, carrot, seasoning, breadcrumbs, eggs and milk. Using clean hands, mix together until texture becomes slightly bouncy. Divide into 12 meatballs. Heat olive oil in a large frying pan over medium heat and cook meatballs for 3-4 minutes to brown.
To make sauce, heat olive oil in a saucepan over medium heat, cook onion and garlic for 3 minutes or until softened. Add adobo spice, stir for 1 minute or until fragrant, add wine, reduce to half the volume, then add canned tomatoes and chicken stock. Bring to the boil, then reduce heat and simmer, uncovered, for 20 minutes or until thickened. Add meatballs and cook for a further 10 minutes or until cooked through. Season with salt and pepper.
Serve with mashed potatoes, parmesan and parsley sprinkled on top.
