Loukoumades with Passionfruit Syrup Recipe
Serves 4
Ingredients:
vegetable oil, for deep-frying
Greek-style yoghurt, to serve
Passionfruit Syrup
1 cup honey
¼ cup caster sugar
½ cup passionfruit pulp
Loukoumades
2 x 7g sachets dried yeast
1 tbsp caster sugar
2 cups plain flour
Method:
To make syrup, combine honey, sugar, passionfruit, and 100ml water in a small saucepan over high heat, stirring until sugar dissolves. Reduce heat to a simmer and cook for 5-7 minutes, or until mixture is thickened and syrupy. Set aside to cool.
Meanwhile, place yeast and sugar in a bowl with 250ml warm water. Set aside for 5 minutes, or until foamy.
Add flour and a pinch of salt, and mix with a wooden spoon until smooth and elastic. Cover and set aside for 1½ hours, or until it doubles in size.
Heat oil in a large saucepan to 180°C. Drop spoonfuls of batter into oil and cook in batches, turning, for 3-4 minutes, or until golden and puffed. Drain on paper towel.
To serve, place loukoumades in serving bowls, drizzle with syrup, and top with a dollop of yoghurt.
