Louisiana Dirty Rice Recipe with Cajun Butter Prawns

Ingredients:
1 tbsp olive oil
2 spicy beef sausages, cases removed
200g pork mince
1 stalk celery, finely chopped
1 white onion, finely chopped
1.5 tbsp Cajun seasoning
¼ tsp all spice
¼ tsp cayenne pepper
1 green capsicum, seeded and chopped
8 okra, halved lengthways
1 bay leaf
1 cup medium white rice
3 ½ cups chicken stock
400g can black beans, rinsed and drained
Cajun butter prawns
100g unsalted butter chopped
2 cloves garlic, crushed
1 tsp finely grated lemon rind
1 tbsp Cajun seasoning
1 tsp paprika powder
¼ tsp cayenne pepper
12 extra-large green prawns
Method:
For the dirty rice, heat oil in a large heavy-based wide saucepan over medium heat. Add the sausage mince and pork mince, celery, onion and cook, stirring for 6-8 minutes or until softened.
Incorporate the spices, capsicum, okra, bay leaves and season with salt and pepper. Follow with the rice and stir to coat.
Add the stock, bring to a simmer. Simmer for 30 minutes, stirring occasionally until rice is tender. Add the beans and stir to combine.
Meanwhile for the prawns, mix the butter, garlic, lemon rind, Cajun seasoning, paprika and cayenne in a bowl. Season.
Heat a large skillet over high heat. Add the butter and cook for 1 minute, or until melted. Add the prawns and cook, turning occasionally for 6-8 minutes, or until the prawn shells change colour.
Serve the dirty rice with Cajun butter prawns.
