Lamingtons with Cream & Cherry Jam. Give traditional lamingtons an unexpected twist with this Black forest inspired recipe, using homemade cherry jam.
225g butter, softened
1 tsp vanilla extract
200g self-raising flour
3-4 tbsp milk
1 Preheat oven to 180°C. Grease straight-sided muffin tin.
2 Cream butter and sugar. Sift flour and cornflour together. Add vanilla, then add eggs one at a time, adding a spoonful of the flour mixture between each egg. Fold in the rest of the flour mixture, adding a little milk as needed.
3 Pour batter into muffin tin and bake for 15-20 minutes, or until cakes begin to come away from the edges and are springy to the touch. Let cakes cool in muffin tin for 10 minutes before turning out onto a wire rack to cool completely.
4 tbsp cocoa
125g icing sugar
125ml boiling water
25g dark chocolate, chopped
100g desiccated coconut
whipped cream, sweetened,
cherry jam, to serve
1 Whisk cocoa and icing sugar with boiling water, then stir in chocolate and let mixture cool.
2 Dip each cake into chocolate mixture and roll in coconut.
3 Finish with lashings of sweetened whipped cream and top with a generous spoonful of cherry jam.
