Give traditional lamingtons an unexpected twist with this black forest inspired Lamingtons with Cream and Cherry Jam.
Lamingtons with Cream and Cherry Jam Recipe
Makes 8-10
Ingredients:
100g desiccated coconut
whipped cream, sweetened, to serve
cherry jam, to serve
Lamingtons
225g butter, softened
225g sugar
1 tsp vanilla extract
200g self-raising flour
25g cornflour
4 eggs
3-4 tbsp milk
Chocolate Coating
4 tbsp cocoa
125g icing sugar
125ml boiling water
25g dark chocolate, chopped
Method:
To make the Lamingtons, preheat oven to 180°C. Grease straight-sided muffin tin.
Cream butter and sugar. Sift flour and cornflour together. Add vanilla, then add eggs one at a time, adding a spoonful of the flour mixture between each egg. Fold in the rest of the flour mixture, adding a little milk as needed.
Pour batter into muffin tin and bake for 15-20 minutes, or until cakes begin to come away from the edges and are springy to the touch. Let cakes cool in muffin tin for 10 minutes before turning out onto a wire rack to cool completely.
To make the chocolate coating, whisk cocoa and icing sugar with boiling water, then stir in chocolate and let mixture cool.
Dip each cake into chocolate coating and roll in coconut. Finish with lashings of sweetened whipped cream and top with a generous spoonful of cherry jam.
