2 egg whites
140g pure icing sugar
100g desiccated coconut
Preheat oven to 180ºC conventional. Line a baking tray with baking paper. Place egg whites in a medium bowl and beat, using an electric hand mixer, until stiff peaks form. Add sugar and continue beating until thick and creamy, then fold through desiccated coconut.
Roll dough into small balls and arrange on prepared tray. Push each one a little on top to create an oval. Bake for 10 minutes or until golden. Set aside to cool then serve.
