Kay Grant’s Boston Bun
This recipe is a family favourite, usually served after something savoury at lunchtime. It is fantastic for picnics, too. A must with butter spread on thick slices.

Makes 1 bun

INGREDIENTS
Bun
2 cups flour
3 teaspoons baking powder
½ teaspoon salt
50 g butter
2 tablespoons sugar
1 cup sultanas
1 teaspoon grated lemon rind
1 egg
½ cup milk
1 tablespoon lemon juice

Icing
1 cup icing sugar
knob of butter
hot water
½ cup desiccated coconut, for topping

METHOD
Pre-heat oven to 200°C. Grease and flour a baking tray.

Sift flour, baking powder and salt into a bowl, and rub in the butter. Add sugar, sultanas and lemon rind. Beat egg with milk and lemon juice and add to the flour mixture. Pat mixture out onto the baking tray until it is about 20 cm (8 inches) round.

Bake for 25–35 minutes, until it is cooked through and starting to turn golden brown. Cool on a wire rack.

To make the icing, mix icing sugar, butter and water together until smooth. Make it quite runny so it spreads easily. When bun is cool, ice with lemon icing and sprinkle with coconut.
Cut into slices and serve with butter.

Best eaten the same day.
