Ginger and 
Lemon Syrup
Avoid sugary drinks during the cold & flu season as they suppress immunity. Opt instead for this warming drop.

Makes 500ml

100g piece fresh ginger, thinly sliced
100g piece fresh tumeric thinly sliced
1 cup raw local honey – or less depending on taste (remember this is a concentrated syrup you will dilute with water later)
1 cup fresh lemon juice (12 lemons)

Boil ginger and tumeric with 1 cup water in a small heavy-based saucepan, uncovered, stirring occasionally, for about 5 minutes. Remove from heat, then strain through a piece of muslin cloth into a bowl.

Return ginger liquid to the saucepan. Add honey and lemon juice and simmer until honey has dissolved. Cool and pour into a sealable bottle and keep chilled.

Two spoonfuls of syrup can be added to 1 cup hot water for a quick tonic.

Tip: If using for a flu-buster add in garlic and chilli for an immune boosting cocktail.
