Refresh your palette with this delicious Melon Wedges with Mint & Malibu Syrup dish.
Melon Wedges with Mint & Malibu Syrup
1 cup white sugar
50ml Malibu liqueur
3 stalks fresh mint
½ rockmelon, pulp and skin removed
½ honeydew melon, pulp and skin removed
800g piece watermelon, skin removed
¼ cup small mint leaves
1 Combine sugar, Malibu and ¾ cup water in a saucepan over medium heat. Stir until sugar dissolves and mixture comes to the boil. Add mint sprigs and simmer for 5 minutes. Remove from heat and pour into a bowl to cool. Cover and refrigerate until required.
2 Cut melons into wedges. Stack wedges on serving plates. Spoon over syrup and sprinkle with mint leaves. Serve.
