Cranberry and Maple Glazed Leg of Ham Recipe

Serves 8-10

Ingredients:

8kg leg of ham

1 1/2 cups brown sugar

275g jar jellied cranberry sauce

1/2 cup pure maple syrup

⅓ cup fresh orange juice

Method:

Preheat oven to 160˚C. Place a rack in the oven on the bottom shelf. Line a large roasting pan with baking paper. Cut around shank of ham decoratively approximately 10cm from end of shank. Remove rind from ham by running your thumb around the edge under the skin at the widest end and gently pulling it back over shank. Discard skin. Using a small sharp knife, cut narrow lines from one side of ham to the other.

Place ham into prepared roasting pan. Place sugar, cranberry sauce, maple syrup and orange juice into a saucepan over medium heat. Stir until sugar dissolves and mixture comes to the boil. Reduce heat to low and simmer for 5 minutes. Remove from heat and cool slightly. Brush glaze generously over ham. Bake for 30 minutes. Rebrush with glaze and bake for a further 30 minutes. Brush again with glaze and bake for a further 20-30 minutes or until ham is glossy, sticky and golden.

Transfer ham to a chopping board. Stand for 10 minutes before slicing. Serve.
