Chocolate Chip Hot Cross Buns. Make your own Chocolate Chip Hot Cross Buns spiked with chocolate for the perfect Easter breakfast treat.
Makes 16
1 quantity basic sweet dough
2 tsp mixed spice
2 tbsp cocoa powder
½ cup dark chocolate chips
⅓ cup sugar
Crosses
2 tbsp plain flour
1 tbsp cocoa
1 tbsp sugar
Make basic sweet dough, adding mixed spice and cocoa to flour. After knocking back dough gently, knead in dark chocolate chips. Grease a 23cm square cake pan; line with baking paper. Divide dough into 16 even pieces. Roll into balls and place in cake pan. Cover with plastic wrap and set aside in a warm place 40-50 minutes or until almost doubled in size.
Preheat oven to 200°C. To make crosses, combine flour, cocoa, sugar and 2 tablespoons water in a small bowl. Use a piping bag, or snaplock bag with corner snipped, to pipe crosses onto buns.
Bake 10 minutes. Reduce oven to 180°C and bake a further 15-20 minutes or until cooked through. Transfer to a wire rack.
Combine the ⅓ cup sugar with 2 tablespoons water in a small pan over medium heat. Stir until sugar is dissolved, then bring to the boil. Brush glaze over buns. Serve.
