Chestnut, Sweet Potato and Apple Stuffing is perfect addition to a festive meal. This irresistible Chestnut, Sweet Potato and Apple stuffing recipe works well with vegetarian mains or roasts like turkey, chicken, lamb or beef.

Chestnut, Sweet Potato and Apple Stuffing Recipe

Makes 3 cups

Ingredients:

1 large onion, finely chopped

200g chestnuts, cooked, peeled, roughly chopped

1 large kumara or sweet potato, peeled, grated

1 green apple, core removed, grated

100g fresh white breadcrumbs

½ orange, juice and zest

¼ tsp grated nutmeg

½ cup chopped fresh herbs, such as sage, mint or parsley

1 egg (optional)

Method:

In a food processor place onion, chestnuts, kumara, and apple.

Pulse until just combined. Put in a large bowl, mix in breadcrumbs, orange juice, zest, freshly grated nutmeg and herbs. Season to taste.

If the mixture is too crumbly, add egg to help bind.

If too wet, add more breadcrumbs.
