Caramelised Onion Sheet Pan Pizza
“I could not think of a better dinner that can be eaten straight out of the pan and on the couch than this caramelised onion sheet pan pizza. I have used onions to make the best caramelised onion topping. The trick to making them is to go slow and cook low. While I have used my homemade no knead focaccia dough, you can easily use store bought pizza base and make the caramelised onions in advance, to make it a little less time consuming on those busy nights,” says cookbook author and influencer Daen Lia.

Serves: 4

 

Ingredients:

1 – 2 store bought pizza bases or pizza dough balls

4 brown onions

2 tbsp olive oil + 1 tbsp to drizzle

1 potato, finely sliced and peeled

2 sprigs rosemary

50g Gruyère cheese, grated

120g buffalo mozzarella cheese

Salt and pepper

 

Method:
  1. To make the caramelised onions, heat the olive oil in a heavy based deep saucepan over medium heat. When sizzling, add the onion. Immediately reduce the heat to low and cook for 60 minutes, stirring occasionally.
  2. Once the onion is golden brown, season with a generous amount of salt and stir through. Take off the heat and set aside.
  3. When ready to assemble the pizza, preheat the oven to 200 degrees Celsius. If using pizza dough, place it onto a sheet pan and stretch out with your hands. Cover with a damp tea towel and leave to rest for 10 minutes. Otherwise, if you are using ready made bases, place them onto a sheet pan.
  4. Top the pizza base with a sprinkle of Gruyère cheese, followed by the caramelised onions, potato slices and buffalo mozzarella. Sprinkle rosemary and salt and pepper all over. Drizzle with 1 tbsp olive oil and bake for 20 – 30 minutes or until golden brown and the cheese has melted.
  5. Remove from the oven and sprinkle with some extra rosemary leaves. Leave to sit for 5 minutes before slicing into it.
