Bean and Pea Salad with Nigella Seeds
Gluten free Christmas feasting has never been so easy. This colourful plate will liven up any festive table.

This Bean and Pea Salad with Nigella Seeds makes a beautiful addition to any summer feast. It is preferable to use fresh peas, but frozen can be used too. Nigella seeds have a sightly bitter taste and a strong aroma, the flavour profile has notes of onion, oregano, and black pepper. You can Substitute Nigella Seed with black sesame seeds, white sesame seeds, celery seeds or cumin seeds.

Bean and Pea Salad with Nigella Seeds Recipe

Serves 4

Ingredients:

250g green beans, trimmed and blanched
250g snowpeas, trimmed and blanched
250g peas, blanched
30g baby beetroot leaves
¼ cup micro basil leaves
2 tsp nigella seeds

Dressing

2 tbsp extra virgin olive oil
1 tbsp fig vino cotto or balsamic glaze
1 small garlic clove, crushed

Method:

Combine beans, snowpeas, peas, beetroot leaves on a platter.

To make the dressing, combine oil, vino cotto and garlic in a jug and pour over the salad.

Sprinkle with nigella seeds to serve.
