Baked Feta with Mixed Olives & Garlic Recipe
Serves 8
- 1 cup extra-virgin olive oil
- 8 garlic cloves
- Peel of 1 lemon
- 250g mixed olives
- 500g Greek-style feta
- 4 oregano sprigs, to serve
- Chilli flakes, to serve
How to make this Baked Feta with Mixed Olives & Garlic Recipe:
1. Preheat the oven to 180°C (160°C fan forced). Place the oil and garlic in a roasting dish. Cover with foil and roast for 20 minutes, or until the garlic is just tender. Add the lemon peel and olives and bake for a further 10 minutes. Set aside to cool slightly.
2. Increase the oven to 220°C (200°C fan forced). Pat the feta dry and place on a baking tray lined with baking paper. Bake for 20 minutes, or until golden. To serve, place the baked feta on a platter and top with the warm garlic, olives, lemon peel and oil. Garnish with oregano and chilli.
