Apple & Pistachio Cookies recipe: Ingredients
Makes 23
- 300g granny smith apples
- 1 tbsp lemon juice
- 1 egg
- 70g sugar
- 1 tsp vanilla extract
- 2 tsp cinnamon
- 1 pinch salt
- 1 tbsp sour cream
- 60ml oil
- 125g plain flour
- 1 tsp baking soda
- 70g pistachios, roughly chopped
- icing sugar, to dust
Apple & Pistachio Cookies recipe: Method
Preheat oven to 180°C.
Peel, core and finely dice apples. Place in a bowl; sprinkle with lemon juice to prevent apples from discolouring.
In a large bowl, beat egg with sugar, vanilla extract, cinnamon and salt until sugar has dissolved.
Add sour cream and oil, continue beating. Sift together flour and baking soda in a bowl. Add egg mixture and diced apples; stir to form a thick batter.
Line a baking tray with baking paper. Drop the batter by the tablespoon onto the tray. Sprinkle with pistachios.
Bake cookies for about 16 minutes, or until the cookies have puffed up and are golden brown.
Remove from oven, allow to cool slightly, then dust with icing sugar.

Has anyone else made these? I gave the recipe to my friend and when he made them he had to put the mixture in muffin tins as it was far too thin and runny for a baking sheet.
