It was master confectioner Paul Fürst who created the world famous Mozartkugel in 1890 to honour the Salzburg-born composer. Much copied, this perfectly round chocolate ball is a delicate creation of pistacho-flavoured marzipan surrounded by a layer of nougat.
To make the praline without a flat base, Fürst placed the marzipan-nougat ball on a small stick and dipped it in dark chocolate. The hole that remained after removing the stick was then filled with more chocolate.
