Wraps with Cauliflower and Spicy Mayonnaise
Make these wraps or plate up all the ingredients and let everybody create their own.

These wraps are made with roasted cauliflower, onions, crisp bacon and fresh lettuce. Everything is wrapped up with a spicy garlic mayonnaise. You could also use naan bread, pita, or a tortilla. Wraps with Cauliflower and Spicy Mayonnaise are perfect or lunch or a light dinner. Simply delicious.

Wraps with Cauliflower and Spicy Mayonnaise Recipe

Makes 4 wraps

Ingredients

  • ½ cauliflower, cut into 5mm slices
  • 1 red onion, cut into rings
  • 1 tbsp olive oil
  • 8 slices smoked bacon
  • 4 wraps
  • 1 packet lamb’s lettuce or watercress
  • 120g mayonnaise
  • 1 clove garlic, crushed
  • ½ red chilli, seeds removed, finely chopped

Method

  1. Preheated oven at 185°C (165°C fan forced). Place cauliflower on a baking tray lined with baking paper. Add red onion and drizzle with olive oil, season. Roast for 25 minutes or until golden-brown
  2. Meanwhile, place the bacon slices on another baking tray lined with baking paper and bake for 10-12 minutes or until crisp. Remove cauliflower, onion and bacon and allow to cool slightly.
  3. To make the spicy mayonnaise, mix the mayonnaise with the garlic, chilli and season with salt.
  4. Spread the wraps with spicy mayonnaise and top with oven-baked cauliflower, onion and bacon. Add lamb’s lettuce. Roll up and serve with remaining cauliflower, bacon and spicy mayonnaise.
