White Soy Dressing

Another Asian essential, used in staple dishes and summery salads.

White Soy Dressing

Makes about 1.5 litres

2 1⁄2 tbsp rice wine vinegar

100g caster (superfine) sugar

100ml light soy sauce

500ml water

100ml kombu extract

700ml white soy sauce 

Whisk all the ingredients together in a bowl until
the sugar has dissolved. This dressing will keep in the fridge for up to 1 month. If you can’t find kombu extract, it’s fine to omit it.
