White Soy Dressing
Another Asian essential, used in staple dishes and summery salads.

To make White Soy Dressing, whisk all the ingredients together in a bowl until the sugar has dissolved. This dressing will keep in the fridge for up to 1 month.

White Soy Dressing Recipe

Makes about 1.5 litres

Ingredients:

2 1⁄2 tbsp rice wine vinegar

100g caster (superfine) sugar

100ml light soy sauce

500ml water

100ml kombu extract

700ml white soy sauce 

Method:

Whisk all the ingredients together in a bowl until
the sugar has dissolved. This dressing will keep in the fridge for up to 1 month.

Smart Tip:

If you can’t find kombu extract, it’s fine to omit it.
