Watermelon Salad with Rosewater-Pickled Golden Raisins Recipe

Ingredients
½ cup (90g) golden raisins
1 tbsp rose water
2 tbsp white wine vinegar
½ small watermelon, cut into beautiful triangles
1 cup chopped cucumber
½ bunch fresh mint leaves
⅓ cup dill sprigs
¼ medium red onion, thinly sliced red
Juice of 1 lemon
2 tbsp extra virgin olive oil
1 tsp ground sumac
½ cup Persian feta
¼ cup (40g) toasted pine nuts
Salt and freshly ground pepper, to taste
Method
For the rosewater-pickled raisins: In a vacuum sealer bag, add golden raisins, rosewater and white wine vinegar. Set vacuum suction and seal to level 3. Let sit for at least 15 minutes (or up to 2 hours) to allow flavours to infuse. If you don’t have a vacuum sealer, marinate the ingredients in a large zip lock bag.
Meanwhile, in a large bowl, combine watermelon, cucumber, mint, dill and red onion. Drain raisins and add them to the salad.
Whisk together lemon juice, olive oil, sumac, salt, and pepper. Drizzle over the salad and toss gently. Top with Persian feta and pine nuts.

If vacuum sealer is not available place ingredients into a bowl or zip lock bag and allow to infuse for 2 hours.
