Vegan & Gluten-Free Super Seed Bark
This really easy to make super seed bark is packed full of healthy seeds, and makes a great gluten-free addition to any vegan grazing board.

 

Makes 1 oven tray

 

Ingredients:

  • 1 cup gluten-free flour
  • 1 teaspoon salt
  • 1/4 cup linseeds
  • 1/4 cup sunflower seeds
  • 2 tablespoons chia seeds
  • 2 tablespoons hemp seeds (switch out any of these for other seeds or even rolled oats as a cheaper option)
  • 1 cup hot water
  • 1/4 cup rice bran oil

 

Method:

  1. Line a baking tray with recycled baking paper and preheat oven to 170°C. In a bowl, mix dry ingredients together well.
  2. Combine water and oil and add to the dry mix. Spread mixture as thinly as you can on the lined baking tray.Its a sticky mess at this stage but have faith! Use a wet spatula to spread as evenly as you can and don’t worry about rustic edges. Bake for 10 minutes, then remove from oven and cut.
  3. Place back into the oven for 50-60 minutes until golden. Allow to cool and store in an airtight container.
