Two quick and easy recipes to increase your milk consumption for healthy bones.
PANEER (INDIAN CHEESE)
Simply boil 2 litres of milk and
add juice of 1 lemon. After stirring for a few minutes, it will separate
into curds and whey. Pour into
a muslin-lined colander and strain away
the whey (which can be kept for use in smoothies or desserts as it is
an excellent source of protein). Press into a plastic takeaway container
and weigh down, then stand for several hours or overnight. Paneer can
be added to curries or used as a dessert, drizzled with honey and teamed
with toasted almonds and fresh dates.
QUICK RICE PUDDING
Cook on top of the stove using 1 litre of milk to ⅓ cup rice and 2 tbsp raw sugar. Cook for 40 minutes until thick and creamy, stirring often to ensure it doesn’t catch on the bottom of the pan. Enjoy hot or cold. This is a favourite with young and old, and can be dressed up with some grated orange rind or a pinch of cardamom, cinnamon or ginger.
