Serves 1
1 round of Lebanese bread or lavash bread
1 tbsp mayonnaise
10g baby spinach leaves
2 slices roasted turkey breast or slices of chicken breast
1 small carrot, cut into ribbons
½ avocado, thinly sliced
2 tbsp semi-dried tomatoes
fresh apricots, to serve
small bottle of water, to serve
Place bread onto a flat surface. Spread with mayonnaise and spinach leaves. Top with slices of turkey, carrot ribbons, avocado and tomatoes. Roll tightly, enclosing filling. Cut in half. Wrap in plastic film. Pack in lunch box with fresh apricots and a bottle of water.
