Ingredients:

200g green tea (soba) noodles (see tip)

⅓ cup light soy sauce

3 tsp rice wine vinegar

3 tsp sesame oil

1 tsp chilli flakes

1 tsp grated ginger

500g sashimi tuna steak, diced into 1.5cm pieces

1 tsp black sesame seeds, toasted (see tip)

150g snow peas, sliced thinly lengthways, plus extra to serve

1 carrot, thinly julienned

2 shallots, sliced

1 avocado, sliced

Pickled ginger, to serve

Wasabi, to serve

Cook green tea noodles according to packet instructions. Drain and run under cold running water to separate.

In a bowl, combine the soy sauce, vinegar, sesame oil, chilli flakes and ginger. Place tuna in a shallow bowl. Add 2 to 3 tablespoons soy marinade to tuna. Add sesame seeds and set aside to marinate.

Combine cooked noodles, snowpeas, carrot, shallot and remaining marinade in a large bowl.

Place noodle salad on a plate. Top with tuna, avocado, pickled ginger and extra snow pea sprouts. Serve with wasabi.

Smart Tip:

Black sesame seeds are available from selected supermarkets or Asian food stores. Green tea noodles can be purchased at Asian food stores, or you can substitute with wholemeal spaghetti.
