Summer is fast approaching, which means it’s time to get your juicer out and make the best of all the seasonal summer fruit.

Whether your looking to impress guests when entertaining, or you just want to create refreshing treats for the kids that you know are good for them, a freshly made juice drink or frozen juice treat will help keep your loved ones hydrated and add some important vitamins to their daily diet.

According to results from a National Nutrition Survey, more than half of all  Australians do not eat the recommended two serves of fruit a day. While containing less fibre then whole fruits, a small glass (125ml) of fresh fruit juice can count towards one daily serve of fruit.

“It’s important to eat fresh whole fruit, which offers the most fibre. But it’s also okay to have a glass of 100% juice, with all its health nutrients, particularly if you want something other than water or you’re struggling to get 2 serves of fruit into your day. It’s all about helping you make healthy choices for your family. Juice is great for fussy eaters and active kids” says Fruit Juice Australia’s nutritionist and health scientist, Kristen Beck.

We asked Kristen to share her four favourite fruit juice treats that are guaranteed to pack a tasty punch this summer!

Pineapple punch

This drink recipe is great for when entertaining lots of people by the pool or beach. It’s a much healthier alternative to soft drinks or other sugar-loaded beverages. Quick and easy to whip up, this recipe makes enough for 10 to 12 cups and is ready in under 10 minutes. 

1L pineapple juice, chilled

1.2L mango juice, chilled

½L soda water, chilled

½L ginger ale, chilled

½ rockmelon, peeled and coarsely chopped

1 apple, roughly chopped

¼ pineapple, peeled and coarsely chopped

Ice cubes, to serve

Mint leaves, to garnish

1 Pour juice, soda water and ginger ale into a large punch bowl or jug. Stir in other ingredients, cover and place in fridge to store till ready.

2 To serve, add ice cubes and garnish with mint.

Cranberry juice twist

Another party favourite, this drink recipe uses vitamin-C packed cranberry and pineapple juices with the fresh flavours of mint and in-season strawberries. It also serves 10-12 cups and is the perfect pink summer tipple for the girls.

2L cranberry juice, chilled

1L pineapple juice, chilled

1L soda water, chilled

250g (1 punnet) of strawberries, hulled and halved

½ cup of mint leaves, roughly chopped

Ice cubes, to serve

1 Pour juice and soda water into a large punch bowl or jug. Stir in other ingredients, cover and place in fridge to store till ready.

2 To serve, add ice cubes.

Homemade icy yogurt poles for the kids

Do away with the cost  of pre packaged ice creams and ice blocks and make your own frozen treats this summer, this recipe serves 6. So easy to make, even the kids can get involved in creating their favourite flavours and you will be pleased knowing your giving them a healthy treat!

½L 100% orange juice

½L 100% blackberry juice

3 x 200g tubs flavoured yogurt

1 Prepare 6 x 250mL plastic glasses or icy pole molds. Place inside each glass a paddle pop stick*.

2 Spoon in yogurt until each glass is half full.

3 Pour orange juice over top of yogurt for three of the glasses, and swap for blackberry juice for the remaining three glasses.

4 Place in freezer to set for two hours.

*TIP: Can substitute paddle pop sticks for teaspoons

Apricot, orange and lemon parfait with whipped cream and mint

Dessert’s don’t always hold up well in the summer heat and though you can spend hours preparing them, often by the time they get to the table all that’s left is a big mess. These parfait cups are the perfect alternative, there no mess presentation and no fuss preparation will make your next dinner party a great success!

(SERVES 6 CUPS PREP 20 MINS)

5 apricots, peeled, seeded, coarsely chopped

100mL lemon juice

250 mL (1 cup) orange juice

250mL (1 cup) coconut cream, chilled

300ml pouring cream

2 tbs brown sugar

¼ cup of mint leaves to garnish

1 In a food processor mix lemon juice, orange juice and apricots until it becomes a coarse puree.

2 Use an electric beater to mix the coconut cream in a large bowl until soft peaks form. Beat the pouring cream in another bowl until soft peaks form. Fold both creams together until well combined. Fold in the sugar.

3 Divide half the apricot mix among six serving glasses. Top with half the coconut cream mixture. Continue layering with remaining apricot and coconut cream mixtures.

4 Garnish with mint leaves.
