Serves 6
200g creamy feta
¼ cup snipped chives
280g bag Taylor Farms Greek Chopped Salad with Greek Vinaigrette
150g Romano baby tomatoes
4 baby cucumbers
1 small red onion
Crumble the feta in a small bowl. Use a fork to mash and mix the feta together. Season to taste with salt and freshly ground black pepper. Take small spoonfuls of the feta and mould into small balls about the size of a walnut. Roll the balls in snipped chives. Leave to chill in fridge for 10 minutes while preparing the salad.
Prepare the cucumbers, by slicing lengthwise into long wedges. Cut the tomatoes in half and remove the core. Peel the skin from the onion and cut into small wedges. Place the Taylor Farms Greek Chopped Salad in a large bowl. Add half of the Greek Vinaigrette and toss to coat all the leaves.
Arrange the dressed salad onto a serving platter. Top with cucumber wedges, tomatoes, red onion and the feta balls. Garnish with extra herbs and serve with the remaining Greek Vinaigrette on the side.
