Sweet Tortillas with Apples and Cinnamon
Use store-bought tortillas to make this easy apple dessert.

Sweet Tortillas with Apples and Cinnamon Recipe

To make Sweet Tortillas with Apples and Cinnamon you start by frying the apples in butter until soft then add sugar, cinnamon, vanilla, cloves and nutmeg. Add pecan for crunch. Wrap the apple filling in the tortillas and top with sugar and cinnamon and bake until crisp. Serve the crisp cinnamon shelled tortillas warm with vanilla ice cream.

 

Makes 4 serves

Ingredients

  • 4 apples
  • ½ lemon, squeezed
  • 2 tbsp butter
  • 100g cane sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla sugar
  • 2 whole cloves
  • 1/8 tsp ground nutmeg
  • 2 tbsp pecans, chopped
  • 4 tortilla wraps
  • Vanilla ice cream, to serve

Method

  1. Peel and finely dice the apples. Sprinkle with lemon juice. In a large saucepan over a low-medium heat, add half the butter and fry apples until soft. Add 2-3 tablespoons of sugar, ½ teaspoon of cinnamon, vanilla sugar, cloves and nutmeg. Allow to caramelise. Remove the cloves from the pan.
  2. Add pecans to the apple mixture. Melt remaining butter. Rub the edges of the wraps with melted butter. Lay the wraps slightly on top of each other and let them overlap by about 2cm. Top with the cooked apple mix and roll up gently. Spread the roll with remaining melted butter.
  3. Mix 1 tablespoon sugar with remaining cinnamon and sprinkle the roll with this. Place on a baking tray and bake for 10-15 minutes or until golden. Serve with vanilla ice cream.
