Summer Aqua Fresca with Flower Ice Cubes

Agua fresca is an easy, refreshing fruit drink made from fruit, water, lime juice and a little sweetener. We have used grapefruit and apple juice, soda water and caster sugar.  This Summer Aqua Fresca is garnished with Flower Ice Cubes and mint.

Summer Aqua Fresca with Flower Ice Cubes

Serves 6

Ingredients:

1⁄3 cup caster sugar

1⁄2 small bunch mint

1 ruby grapefruit, peeled and chopped

2 cups (500ml) cold pink apple juice

2 cups (500ml) cold soda water

Flower ice cubes, to serve

Method:

Place sugar, mint and grapefruit in a jug. Using a rolling pin, press and muddle the fruit and sugar until sugar is dissolved and fruit has released juice. Remove mint leaves and grapefruit rind; discard. Top with apple juice and soda. Serve with flower ice cubes.

For flower ice cubes, divide edible flowers among large ice cube trays. Half fill with water and freeze for 2 hours. Top with more flowers and water, and freeze until firm.
