Strawberry Jam

Strawberry jam is delicious on toast or piped into fresh doughnuts, however you like to eat strawberry jam make it now while the fruit is sweet and flavourful.

Strawberry Jam Recipe

Makes 400g

Ingredients:

1 vanilla pod

300g strawberries, hulled and chopped

2 tsp lemon juice

300g jam sugar

Method:

Split the vanilla pod lengthways and scrape out the seeds. In a saucepan boil the vanilla pod and seeds with the strawberries, lemon juice and 2-3 tablespoons of water. Simmer for 10 minutes, while stirring a couple of times. Add the jam sugar and continue to cook for 2-3 minutes. Keep on stirring.

Remove the vanilla pod and pour the jam into sterilised jars.

Let cool.
