These Strawberry-Filled Doughnuts are perfectly doughy and delicious. Filled with homemade jam and coated with caster sugar they are best eaten fresh.
Strawberry-Filled Doughnuts Recipe
Serves 15
Ingredients:
100g butter
250ml milk
25g fresh yeast
100g caster sugar
½ tsp salt
1 egg
700g flour, sifted
1 litre oil, for frying
150g caster sugar, to coat
200g strawberry jam
Method:
In a saucepan melt the butter, add the milk and heat until the mixture is 37°C. Crumble the yeast and dissolve it in the warm butter mixture. Place the sugar, salt, eggs and flour in a bowl, add the yeast mixture and work it into a smooth, sticky dough. Cover with a clean damp tea towel, for half an hour.
Divide the dough into 15 small pieces and roll into balls. Place balls on a tray and cover with a clean damp tea towel for 20 minutes, to rise. Heat the oil in a large pan to 180°C (use thermometer to monitor temperature) and fry doughnuts for about a minute on each side. Drain doughnuts on a paper towel. Roll them in sugar to coat. Fill a piping bag with strawberry jam.
Pipe jam into the centre of each doughnut to serve.
