Strawberry and Chocolate Chip Cupcakes with Buttercream Frosting Recipe
Serves 12
Ingredients:
200g butter, room temperature
200g white sugar
3 eggs
1 vanilla pod
1 tsp baking powder
400g flour, sifted
50ml milk
75g chocolate chips
250g strawberries, hulled and chopped
Buttercream Frosting
50g soft butter
400g icing sugar
1-2 tbsp strawberry juice
A few drops of red food colour (optional)
Method:
Preheat oven to 200°C (180°C fan forced). Line 12 muffin moulds with paper cases. Using an electric beater, cream butter and sugar until light and fluffy.
Add the eggs one at a time. Beat until smooth. Scrape the seeds from the vanilla pod into the batter.
Add the baking powder, flour and milk. Mix together. Add the chocolate chips to the batter and stir to combine. Fill paper cases with batter. They should be filled to 2/3 or a little more.
Push the strawberry pieces into the batter. Bake for 12-15 minutes or until cooked through and cakes spring back when lightly touched on top. Transfer cakes to a wire rack to cool.
To make frosting, using an electric mixer, beat the butter until fluffy. Add icing sugar a little at a time, mixing until the desired consistency is reached. Mix a little icing sugar with strawberry juice and a few drops of food colour. Spoon icing onto the cupcakes.
