Sticky Sriracha Tofu Bowl

For a healthy vegetarian dinner try this Sticky Sriracha Tofu Bowl full of fresh vegetables and sticky tofu.

Sticky Sriracha tofu

350 g firm tofu
3 garlic cloves
200 g water
60 g tamari
40 g honey
30 g Sriracha® sauce
25 g gluten free cornflour

Veg and Black Rice Bowl

200 g black rice
1000 g water
1 tsp salt (optional)
2 carrots (approx. 180 g), cut into batons
1 bunch broccolini (approx. 160 g)
100 g red cabbage, shredded
100 g snow peas, trimmed and cut into halves lengthways (diagonally)
1 tsp sesame oil
1 tbsp black sesame seeds

Place a bowl onto mixing bowl lid and weigh tofu into it. Cut into 24 pieces and set aside.

Place garlic into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.

Add water, tamari, honey, Sriracha® sauce and cornflour and cook 2min/100°C/speed 1. Pour over tofu and set bowl aside to marinate. Do not clean mixing bowl.

Insert simmering basket into mixing bowl and weigh rice into it. Remove simmering basket and rinse rice until water runs clear.

Place water and salt (optional) into mixing bowl, then re-insert simmering basket with rice and cook 20 min/100°C/speed 4.

Place Varoma dish into position and place carrots and broccolini into it. Insert Varoma tray, weigh cabbage and snow peas into it, secure Varoma lid and steam 5–10 min/Varoma/speed 1 or until cooked to your liking.

Meanwhile, place a large frying pan over medium heat and add sesame oil. Drain tofu, reserving marinade. Add tofu to frying pan and fry 2–3 minutes on each side, until warmed through and golden brown. Transfer onto a plate and cover to keep warm.

Remove Varoma and set aside. Remove simmering basket with aid of spatula. Divide rice, vegetables and tofu between serving bowls, sprinkle with sesame seeds and serve with reserved marinade.

TIPS We prefer to lightly fry the tofu for added texture and flavour, but it can be steamed on the Varoma tray with the cabbage and snow peas.
