Sticky Sherry and Fig Glazed Ham

Sticky Sherry and Fig Glazed Ham Recipe

Serves 10-12

Ingredients:

1 cup vinno cotto

1 cup apple juice

2 cups Pedro Ximénez sherry

1 cup sherry vinegar

1 cup fig jam or relish

¼ cup Dijon mustard

4 cloves garlic, crushed

1 tbsp cracked black pepper

1 tbsp smoked paprika

1 cinnamon quill

4 sprigs rosemary

1 ½ cups firmly packed brown sugar

1 x 8-10kg smoked ham

Method:

To make the glaze, combine vino cotto, apple juice, sherry, sherry vinegar, fig jam, mustard, garlic, pepper, smoked paprika, cinnamon, rosemary and brown sugar in a large saucepan. Bring to the boil, reduce the heat to medium and simmer for 30-40 minutes, or until reduced and thickened. Remove the cinnamon quill and rosemary.

Preheat the oven to 200°C (180°C fan forced). Use a sharp knife to score the skin around the sides and hock of the ham. Using your fingers, gently remove the rind. Trim any excess fat.

Place the ham on a small roasting rack in a large deep roasting pan, lined with foil. Brush ham with remaining glaze. Roast for 1 hour, brushing with glaze every 15 minutes, or until the ham is golden and sticky.

To serve, place ham onto a large platter and slice.
