Makes 4 cups
750g mixed nuts (try cashews, natural almonds, pistachios and pecans)
ó cup pumpkin seeds
2 tbsp olive oil
2 tbsp honey
2 tsp sea salt flakes
2 tsp ground cumin
1-2 tsp chilli flakes
1 tsp smoked paprika
2 tsp ground cumin
Preheat oven to 160°C fan-forced. Grease and line a baking tray. Toss all ingredients in a medium bowl until nuts are coated. Spread onto prepared tray. Cook for 15 minutes, tossing halfway, then for a further 5 minutes or until nuts are roasted. Set aside to cool then serve. Store in an airtight container for up to 1 month.
