Cool mornings typically herald the start of porridge season, but that doesn’t mean you have to stick to oats, try this simple rice porridge for a warming breakfast.
Serves 4
600ml organic soy milk
400ml organic coconut milk
½ tsp ground cardamom
½ tsp ground cinnamon
⅓ cup sushi rice
⅓ cup organic raw sugar
organic maple syrup, to serve
250g mixed berries, to serve
1 Put soy milk, coconut milk, cardamom and cinnamon in a saucepan. Bring to the boil. Stir in rice and cook over medium heat, stirring occasionally, for 20 minutes or until rice is soft. Stir in sugar and cook until dissolved. Remove and stand for 30 minutes to thicken.
2 Serve pots of rice swirled with a little maple syrup and mixed berries.
